Apple Carrot Crumble with Whipped Cream
If you're new to Keto or just haven't gotten around to trying them, I absolutely love the KetoCal powders by Nutricia. They are a great high fat, protein packed way to add a dry ingredient to your baked goods. We are often stuck having to add butters and oils to our Keto baking routines which can often lead to greasy cookies, breads, brownies etc. The KetoCal powders work more like a "flour substitute" and they are a staple ingredient in our Keto kitchen! (Reach out to your neurologist or dietician to find out more about KetoCal) Nutricia also has lots of great recipes to go along with their products and this recipe is a slightly adapted version of the original Apple Crumble with Whipped Cream that can be found as a standard snack on the Keto Diet Calculator. I wanted to bulk up the recipe so I swapped out some of the apple for carrot to make the meal bigger and added nuts/seeds to the crumble to help give it some crunch. I'm certain your kiddo will enjoy this sweet and savory treat!
Equipment:
Ramekin or Silicone Mold
Mandoline or Cheese Grater
Ingredients:
Apples, Raw w/o Skin
Carrots
KetoCal 4:1 Powder by Nutricia
Vital Protein Collagen Peptides Powder
Dried, Shredded, Unsweetened Coconut Flakes
Dried Pumpkin Seeds
Chopped Pecans
36% Cream
Cold, Cubed Butter
Cinnamon
Non-Nutritive Sweetener (Optional)
Instructions:
Preheat the oven for 325F. Start by shredding your apple and carrots then toss them together with a pinch of cinnamon and place in your ramekin. In a small bowl, add butter, KetoCal, collagen powder, coconut flakes, pumpkin seeds, pecans and pinch of non-nutritive sweetener and cinnamon. Using your fingers, combine the ingredients until you have a crumble topping. Place your crumble on top of your apples and carrots and bake for 20 minutes or until golden brown.
Let cool slightly then whip your heavy cream using a mini mixer and add it to the top and enjoy! Heavy cream could also be watered down and served on the side as milk.
Notes:
This mini mixer is EVERYTHING. I highly recommend puchasing at least one to have on hand. If you don't have a mini mixer on hand, simply pour your cream into a very small jar (a condiment/dressing storage container, baby food jar etc) and shake vigorously for a few minutes until it becomes cream.
This is definitely not a 5-minute meal so I usually make three of them to store in the fridge and reheat in the oven over the next few days.
