Catalina Crunch Cereal
Our son loves cereal with milk and it was one of his most requested meals before switching over to Keto. So naturally we wanted to find ways to incorporate his love for cereal into the diet. With both kids in school now I have taken to aimlessly walking the aisles of the grocery stores to see if any food products would be a good fit for William's strict limitations. One morning after drop-off I happened upon the Catalina Crunch brand cereal. Then, shortly after requesting our dietician add them to our database, developing the recipes, waiting for recipe approvals, ordering off of Amazon, waiting for the package to arrive then food prepping - it was a big hit! I'm poking fun a bit but it can be challenging to go through these steps when your eager to have your child try something new. Catalina Crunch has a great line of products beyond these two listed so I definitely recommend checking them out. Here is how we incorporate these two cereal flavors for a quick and easy breakfast or snack.

Ingredients:
Catalina Crunch Dark Chocolate or Catalina Crunch Cinnamon Toast
Heavy Cream
Group A or Group B Vegetable
Coconut Oil
Using the ingredients above, calculate out your recipe in the KetoDietCalculator. I have listed William's recipe at the bottom of this post for reference.
Instructions:
In advance, measure and melt the coconut oil then pour it into a silicone mold and place it in the freezer to re-harden. Then weigh out the remaining ingredients separately. Add about two ounces of water to the cream to create milk and toss the cereal in. Serve with coconut "candy" and veggies on the side.
Notes:
I ordered this brand of cereal online however I have seen it popping up more in stores in our area so get out there and check out your local cereal aisle first.
You can recalculate the meal to swap out the veggies for fruit if you like but I stuck with the Group A vegetable to help bulk up the size of the meal. Fruit, while also a great option, will result in a smaller meal size due to a higher carb count.
