Everything Bagel Bites

There's nothing like a toasted everything bagel with cream cheese but unfortunately bagels aren't exactly a pantry staple for this diet. So I set out to create something that was keto friendly, crunchy and everything bagel flavored without all the carbs. This one is really simple to make so let's get right into it!

Equipment:
Scale
Small Pan & Tongs (optional - can be eaten uncooked)

Ingredients:
Mr. Tortilla Soft Taco Shells
Philadelphia Cream Cheese
Avocado, California or Hass
Butter
Everything Bagel Seasoning

Instructions:
Weigh out your taco shells. If you need to cut off some to get them to the correct weight I recommend cutting so they are still round and easy to roll up. Spread the cream cheese evenly and to the edges of your shells then add your sliced or mashed avocado. The seasoning can either be added now or sprinkled on top of the rolls once cooked. Melt the butter on medium/low heat and place your rolls seam down. Using tongs, turn them occasionally to cook evenly on all sides while also spreading them around to absorb all the butter. Once all sides are brown they ready to eat!

Notes:
You can swap out Mr. Tortilla for another brand of tortilla but this happens to be our favorite at the moment. Because they are thin and sturdy William can have a 'larger portion' (for example version Mission Carb Balance) which allows me to roll them. They will burn easily so watch them closely while cooking.

This is a cook and eat meal - I would not cook these then pack them for travel, school etc. But if you're looking to pack them, of course I've got you covered! In a separate recipe, I swapped the butter for coconut oil which I then freeze and serve on the side as a "candy". The bagel bites can also be cooked in the coconut oil if your prefer. Both my butter and coconut oil recipes are below.

If your child simply prefers them uncooked and is willing to eat butter on its own you could certainly just serve the butter on the side. Since my little one won't eat butter alone, I send the uncooked coconut oil version of this recipe to school and we save the cooked ones for home.
