Ice Cream Bars
This is hands down one of William's favorite meals - it's super simple, tastes great and it's an easy grab-and-go recipe for your freezer. It started as a yogurt recipe, which was a staple in our house when William first went on the diet. As with many of our recipes, we decided to put a twist on it and try to make ice cream. Our first attempt at making ice cream was taking his yogurt recipe and freezing it in a bowl. We realized pretty quickly that the consistancy was too hard to eat with a spoon. So instead I ordered these silicone popsicle molds and wooden popsicle sticks and the Ice Cream Bar was born.

Silicone Popsicle Molds
Popsicle Sticks
Scale
Small Bowl
Spoon or Spatula
Ingredients:
Too Good Yogurt (any flavor)
Heavy Cream (36%)
Fruit
Coconut Oil
Using the ingredients above, calculate out your recipe in the KetoDietCalculator. I have listed William's exact recipe at the bottom of this post for reference.
Instructions:
Simply weigh out all the ingredients into one bowl and stir until the heavy cream is combined. Be sure to use coconut oil that is solid (not melted or sold as a liquid) as it will affect the consistency of the yogurt and cream. Place the popsicle sticks in the mold prior to adding the yogurt mix, then scoop out all the ingredients into the mold. Place the molds onto a cookie sheet and freeze.
Notes:
There are lots of plastic popsicle molds out there but I find it's MUCH easier to remove the bars from silicone. The bars are difficult to remove from the plastic and can break as you're trying to remove them.
For our mold (linked above) each recipe makes two popsicles, this of course may be different for you depending on your specific mold or your child's diet specifications.
I also make non-Keto ice cream bars for our younger son. I don't weigh anything out but I combine yogurt, heavy cream and fruit (no coconut oil) and add them to the molds as well so that they can enjoy ice cream together. Be sure to label the popsicle sticks so the two don't get mixed up.
Try this same recipe as a yogurt!
Instead of freezing it, measure out the heavy cream separately and whip it. After it's whipped, add it to the yogurt, oil and fruit then gently fold it in.
